INGREDIENTS:
1 ¼ cups warm water
1 tbsp yeast
1 tbsp honey or molasses or brown sugar
2 tbsp gluten flour*
1 tbsp oil or Tahini (sesame seed paste)
1 tsp salt
2 ½ – 3 cups whole wheat flour
INSTRUCTIONS:
Mix water, yeast and sweetener. Allow to bubble if you need to test yeast. If you know the yeast is good, skip this step. Add remaining ingredients, adding enough flour to knead without being too sticky. Knead for about 10 minutes, until dough “bounces back” when you poke it. Allow to rise in warm place until double in size. Knead the dough again and shape it into loaf or desired shape. Bake at 350F for about 35 minutes, or until golden brown. Wait at least one day to serve.
*Adding gluten flour will make lighter bread.

Maria’s Homemade Granola
Mix the following ingredients into a bowl:
8 Cups rolled oats
1 cup nuts (almonds, chopped walnuts etc.)
1 cup unsweetened coconut
1 tsp salt
1 tsp vanilla
Blend:
¾ of a fresh pineapple or 3-4 mashed bananas
Method:
Mix the wet and the dry ingredients.
Bake at 225˚F for about 2 hours or until is dry and pinkish color.
It can also be left in the oven overnight at 170˚F.
